Tofu, it doesn't taste like anything and is soybean based, many products are made of tofu and taste like real meat, such as Boca burgers and tofu pups.

I recommend the recipe book by Francis Moore Lappe called Diet For a small planet. Some of it is dated now but great recipes in there. Combo eating is what u must do such as rice AND beans etc her recipes and information can make eating vegetarian easier transition and more cost efficient
