When cooking, how do you skim fat from cooking juices
The fat will float to the surface in the form of grease, use a large flat spoon and just barely rake it along the surface to collect the grease without picking up a lot of the liquid
Do as Deana says, or buy a grease separator at any house ware store. It makes it a bit easier as you can use a ladle and don't have to be as carefull when skimming.:-)
If you are cooking a day ahead the fat will become a solid piece overnight and can easily be lifted off. Another alternative is to skim a wadded up paper towel across the hot surface and the greasy part will soak right up.
