I have a male and a female... and they can be quite protective of their eggs, but they still seem to end up eating them from time to time.

If they are eating their eggs, they're not getting the nutrition they need from their food and surroundings. The eggs are rich with what they need, so they eat them. Try feeding them supplemented food and keep feeding them near the eggs, as they may not leave the eggs for too long causing them to start starving themselves.
