A lean protein, a vegetable and a salad w/ a little dressing. A hamburger is easy; salmon or fish poached or baked. Chicken or pork is an alternative. Checkout sparkpeople.com for low carb easy recipes.
Whatever meat you select boil it, grill it, or saute it in olive oil or avocado oil; avocado oil will give your food a green hue, but its delicious; choose a vegetable w/a lot of nutrients, like spinach or broccoli; steam them; don't overcook them, boil or microwave about two red potatoes per person. It is important to eat different things each day. If you insist on fish make sure it's a lake fish; less mercury. I love tilapia.
Well, I'm not sure it is completely healthy but I do know that Sopita is a great mexican soup. It has the noodles with tomato sauce and caldo de pollo and cheese if you wanna know how to make it just comment! :)
