You hold them sort of like a pencil with a loose tripod grasp then use your thumb and index finger to move the top one while the bottom one stays immobile. It it hard at first and takes LOTS of practice. My dad started teaching me when i was young and i tried to use them every chance i got thru the years. Now im pretty good with them. Im a bit awkward sometimes and Asain folk probably laugh at my technique behind my back but i can pick up a single grain of rice so I'm happy. I personally think its easier to eat sushi with chopsticks than a fork.
