Have any of you done a "low carb" diet for an extended period of time? What are some good meals/foods that are very low in carbs?

You don't have to list an entire recipe. I just want to know from personal experience. I am curious if anybody has had better luck with carbs vs. caloric diets.

I'm on a low carb diet. For medical reasons, actually, as I've got delayed insulin (but not diabetes, to avoid confusion.) The idea is that you want to eat a high protein diet, because protein digests more slowly. So something good would be a philly cheese stuffed bell pepper - sauteed mushrooms, onion, and garlic, grilled and diced chicken breast, all stuffed into a bell pepper, topped with a slice of provolone cheese, and baked. Beans, nuts, and sweet potatoes have a lot of protein and their starches are "complex carbs" which digest slower than simple carbs like wheat and rice. Also avoid lots of added sugars and salt - so I normally recommend going for spices, not sauces.

What I am asking is, does the chicken need to pre cooked?

LOL. We grilled the chicken on a George Foreman grill so yeah, cooked before it's put in the pepper. It's really easy.

1. Chop a sweet onion, some mushrooms, and throw them in a pan with a tablespoon of coconut oil (or just canola oil. Coconut's better for you though.) Add a 1/2 tbsp of minced garlic. Sautee until tender (I like the onions a little browned honestly, but you'd have to hold the garlic until the onions are almost done, because garlic burns easily.)
2. Meanwhile, grill chicken breast.. It's faster if you butterfly the chicken or buy the thin cuts. Use about a pound of chicken. Cook until done but don't let it get tough.
3. Dice/chop/shred the chicken evenly. Mix into pan with veggies.
4. Cut the tops off of 4 large bell peppers - color doesn't matter. Rinse seeds out. Stuff a slice of provolone cheese inside (we use the Sargento thin-cuts). Distribute chicken/veggie mix evenly between the peppers. Top with another slice of cheese. Bake 400 F for 15 minutes. All done! :)

I tried a low carb diet, but it didn't work for me. The problem was I enjoy drinking beer to much. Any carbs I was cutting out got replaced by the occasional beers I was having. Plus I would drink beers with a higher carb count because of the cutting of carbs in my diet. Stay away from the beers and it might work for you.

Though I didnt try it for myself. But i have some ideas about low carb diets as I have heard from one of my colleague who used it for herself. I think I can share it with you. It may be helpful for you, who knows? You know most non-starchy vegetables are low in carbs. Among them few are Asparagus, Bamboo Shoots, Bean Sprouts, Beet Greens, Bok Choy, Broccoli, Brussels Sprouts, Cabbage, Cauliflower, Celery Root, Chard, Collard Greens, Cucumbers, Dandelion Greens, Garlic, Lettuces and salad greens (Arugula, Bok Choy, Boston lettuce, Chicory, Endive, Escarole, Fennel, Mache, Radicchio, Romaine, Sorrel.), Mushrooms, Snow Peas, Spinach etc.

My colleague has tried these for losing weight but she didnt get the result as she expected. You may also try these once. Besides this I would like to suggest you, If your intention is to losing weight then its better to follow a particular weight loss program in addition to low carb diets. I do a lot of chicken sauteed with onions, garlic, mushrooms, oregano and whatever else I can find. Chicken with a side of green beans or spinach is great and I'll reach out for a sweet potato once in a while. I'm not a big fan of beans. Hi Click! I have tried every diet ever created and one of the most effective ones was Dr. Atkins'. I finally went to a doctor who performed bariatric surgery (banding, gastric bypass and so on) for over 40 years. He told me that the only diet that will work for me is no carbs, he told me, and I quote: You can eat it if it moves. Don't eat anything with roots. Cheese is glorified fat. He also prescribed Phentermine for my addiction to carbs and it helps tremendously with hunger and cravings. Other than fasting, Optifast in my case, medically supervised, which allowed me to lose 100 pounds, but then allowed me to gain it back, plus some, nothing has worked better. You need to watch your cholesterol levels as meat can make them shoot up. You don't have to be hungry, ever, but if you go off it or cheat even a little, you will gain weight because your body will go out of ketosis and you'll be eating too many calories. Good luck! (Ketosis as I understand it, is when your body burns fat for energy because it is not getting carbs, the typical source of energy. NO SUGARS.
