Why must dogs sniff for a place outside to do their business? why can't they just go anywhere on the grass?

Dogs use their pee to mark territory. If a dog smells another dog's pee, it might try to mark over the top with its own pee, in order to claim the territory for itself. It's a little bit like graffiti taggers trying to show each other who was there last, and how impressive their tag is.
