Hi, Jonthan. I can't describe how much I love animals, so I must ask you this question. It bothers me the way you worded your question using the words "a bit MEANER" as opposed to maybe "a better watchdog." Pit bulls get a bad name because of the people who own them. They're actually very sweet dogs. I wonder about your motive. To watch a home better is one thing (like barking when people come to the door to alert you); I mean my chihuahua does that; but meaner? I don't think you want it meaner. You can teach it to be a better watchdog, but please don't teach it to be "meaner" and "nicer" to certain people.
Why would you do that? The dog already has a BAD reputation. You don't EVER want your dog to be mean to strangers. A dog won't be able to tell the difference between a child and an adult stranger, is that really what YOU want?

"Meaner" to strangers? Like you WANT an aggressive dog?
The problem with trying to train a dog to be aggressive is .. it doesn't have the ability to discriminate. It will see everyone as a potential threat therefore running the risk of actually attacking someone who doesn't deserved to be attacked...like members of your extended family or friends...the paper boy, the mailman, the little girl scout coming to your door to sell cookies.
If find the practice appalling!
.. and to add insult to injury .. THEN .. the dog pays the ultimate price because it's owner has done this TOO HIM! What are you thinking? Pits already have a bad reputation .. Please DON"T add to it!
Bad idea! It will eventually turn on you. Dogs need to respect every human being unless a dog see's and/or senses someone hurting another individual which i understand. Be very affectionate to your pooch!
I hope you mean wary of strangers. Lots of love, affection, training and execise. As for strangers. Dont allow the dog to socialize with strangers. Put the dog in the kennel when visitors arrive to visit etc. You should probably take the dog to obedience school as well. It'll do you as much good as the animal. You dont want a "mean pitbull" If your dog loves you and your family it'll naturally become a good watch dog.
I had a pittie-mix when I was going through an extremely difficult time in my life. She was right there by my side all the way and I will always love her terribly and miss her with intensity. There is no need to make any dog "meaner," they need to learn to obey and to have good manners, but not be mean. In the case of pitties, there is no need for them to be mean, their undeserved reputation will keep people away from them without any help from them. Concentrate on loving your dog, taking good care of it, and becoming the person your dog believes you are!
