There are good carbs and bad ones. Carbs get unfairly blamed for weight problems because of the excessive sugar (a bad carb) many people consume. Add in white bread and french fries and everyone says all cards are bad. Eat a well-balanced diet of a wide variety of healthful foods, including fruits and veggies, lean protein, low-fat dairy, and whole grains. Read labels so you'll know what you're eating. Use healthy oils (olive, canola) sparingly and drink lots of water. Limit treats so they really are just treats. Exercise 30 minutes or more most days of the week, working out hard enough that you elevate your heart rate and break a sweat. Vegan isn't bad, but you really do have to do your homework to make sure you're getting all the nutrients your body needs.
