While eating lots of fruits and veggies is healthy for you, if you aren't careful you could still end up malnourished if you aren't getting enough of the right sort of vitamins and minerals in your vegetarian diet. It requires a bit extra planning, but it can be done - just have to make sure you are eating enough veggies that are high in protein, and other essential nutrients.
I've only known one true vegetarian, after the first week she looked all pale, with bags under her eyes, a few years later I saw her again (just a couple weeks ago) and she had gained a LOT of weight. I'm not sure how eating veggies would make her gain weight or if that even had anything to do with it, but she was pretty big.

It comes down to same thing with any diet. It needs to be balanced. Too many fruits and veggies that are high in carbs is like eating sugar. And not enough of the one that have protein will end up in loss of muscle mass.
