Why do the animals we eat have more fat but less protein than about forty years ago?

Because we are feeding them things they would never eat naturally (ie: corn, meal, byproducts, etc...)

Too much of what we feed livestock today, is full of fillers intended to make the feed more abundantly available and last longer to put it plainly. We no longer feed our animals what their bodies were designed to live off of. ynp.214 and sunnyrain pretty much covered it.

It's the feeding they now get as mentioned, but also, they are often kept in tight quarters where they can barely move; so they don't develop naturally, and are mainly fat and no muscle.
