Make chicken cordon bleu. It's a lot easier than you'd expect. Take boneless skinless chicken breasts and slice them down the side, making the chicken sort of like a pita pocket. Stuff ham and swiss cheese into the pocket. Then pan fry it in a lightly oiled skillet about 5 to 7 minutes per side over medium heat. And that's all there is to it. Enjoy.
Cook some chicken up and have it on hand to make a sandwich, taco, nachos, put it on a salad, add it to some Mac N Cheese, etc.
Turkey or Roast Beef deli meat and you can make sandwiches, wraps, layer a slice of meat >> a slice of cheese >> a slice of meat and roll it up then slice in to bite size pieces, use a toothpick to keep them together and serve with crackers
Some good things to snack on: Fresh fruit (you can freeze grapes, strawberries, pineapple and it makes for a cool treat), Smoothies, Apples/Celery with peanut butter, a portion of nuts.
