None of the blossoms on my watermelon plants are producing at all, do they need help being pollinated?

Sounds like it :) Try using a small paintbrush.A Q-tip will also work.

Well this is my first run at growing watermelons, haven't had a garden in quite a few years, is it best to use qtips?

You can go ahead and pollinate them by using an artist's brush or cotton swab. Most watermelon produces only male blossoms for some time before they produce female blossoms. This creates higher chances of male blossoms to dry up and fall off before pollinating a female blossom.
