Does green tea have to be steeped in hot water to release the flavonoids or can flavonoids be slowly steeped out in cold water?

Cold water extracts a lot less flavonoids and provides less antioxidants, but tastes better than hot brewed green tea. If you are going for health benefits, I suggest you use hot water :)

The flavonoids extracted from green tea in cold water are less, as compared to the amount you would get if the tea was steeped in hot water. To extract a lot of flavonoids, you must use more heat and time.

I suggest boiling water and then letting the water cool down a bit. Boiled water actually releases toxins. But hot water can still release most of the flavonoids where as cold water can not release nearly as many.
