I am originally from Tx but moved to the W Coast when I was a teen.... it's been really hard to find *good* Tx style BBQ.. (bear with me this is going somewhere I promise) anyway one day while walking through a part of town I had never been in I see this little hole in the wall restaurant with a sign that says Tx BBQ.... I think eh.. why not.. (turns out it really was authentic Tx style BBQ btw) but as I am talking to the owner trading backgrounds and lamenting there is no good BBQ out here he says "I KNOW!! All I wanted was a real BBQ sandwich, but couldn't find any so I had to open a restaurant just to get me a good sandwich!" ^.^ ... it was prob something like that :) He wanted a really good game with all the things this one has but couldn't find one so he had to MAKE it :D... Just a theory
