What's the earliest date I can make cookies that will be fresh and edible on Christmas Day?

Cookies will be Toll House, peanut butter cookies, almond cookies

You could make the dough and freeze them and then take it out to thaw then bake 1 day ahead of when you will eat or give them away. The dough would just need to be put in the fridge to thaw a day or two before baking.

we used to bake cookies a couple weeks ahead of time and freeze them, they were loved by the neighbors and friends as gifts.
