Rubbing a turkey with coconut oil before roasting it would probably have the same effect as butter has but it is seldom done. Coconut oil is most commonly rubbed on already cooked turkey before carving. coconutoilcooking.com has more on the same.

The way I was taught to roast turkey was to rub the turkey down with butter before roasting it, to help keep it from drying out. I imagine coconut oil would have the same effect.

I use coconut oil instead of butter all the time, I'm sure it would be fine.
