Why is new stuff usually more low quality than antiques?

For example, Sesame Street used to have a whole range of unique lovable muppets, all being used by amazing puppet masters, everything was just the way it should be. But if you haven't noticed, the new Sesame Street, after the death of the founder decided to be lazy and use CGI, as well as change the theme song to cheap. Elmo was now the star of the show, and some other muppets were cut from the show, muppets who make even a brief appearance is lucky to be there. Nowadays, artists just do digital art but back in those days, artists were so amazing, their art was really stunning. Don't ask me what's up with quality these days, because you tell me.

Everything needs to be made faster and more 'efficient', and nothing has the amount of time or care put into it as it used to.

In case of Sesame Street, the founder died and his vision was lost. Also, everything costs more now and they are trying to stay relevant, also, by pandering to the little kids. It also sells toys, which they are probably under pressure to do.
I agree, it's sad the way things are so...rushed these days.

Not to forget that the antiques that we preserve or remember are the things that worth saving. There is a lot of stupidity in the past too but no one remembers them now. Of course Sesame Street aside. So entertainment industry is ridiculous the same in average.
