If you can think a head of time, then start with lukewarm water and medium heat and let it come to a boil, then put cover on and sit for 20 minutes. If two eggs then 30 minutes. This makes the egg softer, easier to slice and nicer texture for eating, more healthy. The shell will come off easily if you run cold water over it while carefully taking the shell off. (It takes a little practice).
Soft boil is 3 to 5 minutes after adding salt. I hate a runny yolk so I do 10 minutes from cold water. Hard boiled is 22 to 25 minutes from cold water after adding salt to the water. Place in cold water and put ice it to separate the skin form the egg when peeling.

Ok, here it is: 1. Start with cold/room temperature water and poke a hole in the rounded end of the egg. This will equalize the pressure and keep the shell intact. 2. Put the eggs in the pot; it is not necessary to salt the water. 3. Turn on the stove and bring to a rapid simmer. 4. Drain the eggs after 10 minutes of simmering and roll them around in the pot to crack the shells while they are still hot. 5. Put the eggs into an ice water bath until they are cool. This is CRITICAL !! If you do not do this, you are leaving the sulfur in the eggs and that is what you will taste! A boiled egg with a green ring around the yolk, that is the sulfur. 6. If you want a beautiful creamy center, get the water to a rapid simmer, then put your room temperature eggs in for no more than six minutes. Follow the above steps to remove the sulfur, but if you want to use them right away, don't leave them in the water until they are cold; you will still remove the sulfur. If you want to heat them up just a bit, you can carefully peel them and drop them in hot water for 30 seconds or so. 7. Enjoy God's gift!
The perfect hard boiled egg...start eggs in cold water, bring to boil. Boil eggs for 5 minutes, turn off heat. Let sit in hot water for 5 minutes. Drain water fill pot with cold water and ice cubes...let chill for a few minutes. Perfectly cooked and no green!! Works every time!!
