actually endive is another name for green leaf lettuce. the only difference is you can eat endive cooked or raw. when you cook endive it is like spinach that has been cooked but doesn't smell as bad or taste like spinach. a good recipe for endive is to wash it and cut it up like regular salad, cook some bacon and crumble it up over the endive and pour the hot grease over the endive, add two teaspoons of vinegar and two teaspoons of sugar, stir and serve. tastes great and makes a terrific salad.
