The eggplant - to peel or not to peel - It's a matter of personal taste in more ways than one. It appears that most people either peel or don't peel the eggplant (also called an aubergine) depending on how it was prepared when they were growing up. However, there are those people who have eaten it prepared differently than they normally do and say they have found no difference in taste. Also for some people, peeling or not peeling depends on how the eggplant will be cooked. Ef it is fried they don't peel, but if it is used in a casserole dish, they do peel. So it's your choice. Another preparation detail that is up in the air with regards to eggplants is whether or not to ?sweat?. Sweating an eggplant means to salt first and then rub with a towel ? it is supposed to reduce the bitterness. But again this is your choice, some think it does help, and others find no difference.
