You'll get many conflicting answers, and the terms GMO, gluten, safety, etc, are thrown around wildly. Do you mean you want to eat healthy? In short, realize that a balance of fresh foods and whole foods (minimal processing) with proteins, all in moderation, are always better for you. When you have the choice, for example, choose fresh ground wheat flour over enriched white wheat flour as the healthier choice.
Enriched flour is flour in which most of the natural vitamins and minerals have been extracted. This is done in order to give bread a finer texture and increase shelf life. When the bran and the germ (the parts of the wheat that contain fiber and nutrients) are removed, your body absorbs wheat differently. Instead of being a slow process that gives you steady bursts of energy, your body breaks down enriched flour more quickly, which typically raises blood sugar more quickly as well. This excess blood sugar has to be metabolized by the liver, and if there’s an excess of sugar, your body will store some of it as fat. Read that again: your body STORES IT AS FAT. All this and you’re not even getting close to the amount of nutrients that whole grains contain. In other words, enriched flour sounds healthy but isn’t so healthy after all.
To a degree, yes it can be. I would consider it a fast carb whereas 12 grain or whole grain is a slow carb with a slow gradual release of energy. Carbs are our primary source of energy. 3 part carb 2 part protein and 1 part fat. White bread is stripped of its natural fiber. It's good to get the natural fiber and roughage in the whole grains. We need both though. Sometimes we need fast carbs depending on our activity levels, so a soda or sugars or other carbohydrates are necessary. The fiber is necessary too. Your body and "how you feel" is the best indicator to use. If you feel stopped up then perhaps this white flour is doing it. I like to eat about 3 or 4 slices of whole grain. 2 in the morning and 2 in afternoon and into the evening for the good fiber and slow carb intake. Hope this helps.
