A good white sauce goes on just about any kind of potato. Melt butter in a pan, add salt and pepper. Put pan on low heat to melt the butter. Add flower (about same amount as butter) and stir the two together (with wisk if you have one). Slowly add milk (how much? do you want a thin sauce or a thick? in other words... put in as much as you think you need). keep stirring the sauce to blind all together. Keep stirring as you bring it slowly to a boil and it starts to thicken. Taste it. Add salt and or pepper to taste. When you have it seasoned to liking and thick enough, put it in a gravy bowl and serve it with dinner. Put as much as you need on your potato and enjoy. (p.s. I also like to add some garlic to my white sauce, but that is up to you) p.p.s a good amount of butter and flour to start with is a quarter cup.
