Can you use a normal controller for guitar hero on the PS2?

You can use a normal controller for guitar hero on the PS2, you just need to have a PS2-USB adapter. Alternatively, you can press the left arrow on the D-Pad while inserting the controller so that the game can detect the normal controller as a guitar.
