Year One Restoration Parts

In 1969 I purchased a new 69 Pontiac Firebird 2 door hardtop. It is a 350 ci, 4 speed 265 hp vehicle with 77,000 miles.
I would like to restore and beef up the engine a bit and was wondering where
to start ? I would rate the vehicle condition as "good" with 2 areas of minor rust and a hole in the rear bumper. Is there such a thing as "frame
off" ? We have the McPherson College of Auto Restoration in the next
state as an option. Also, we have Pittsburg State University College of Auto
Technology in the same state as another option. I also know sources for body work, but am wondering about the engine and the total picture ?
Can you provide any initial suggestions ?

These include a 3 two-barrel carbs for the 389, a four-speed Hurst connection shifter together with a 3.55:1 rear-axle ratio.
