Well... anytime you are going more than 20 mph over the speed limit it's considered reckless driving. So at that point, not only is it a ticket, but you are also facing criminal charges. With going 81 in a 40, they are likely going to push for a maximum sentence, since that is more than double the speed limit.
Per the state statutes...
"Sec. 545.401. RECKLESS DRIVING; OFFENSE. (a) A person commits an offense if the person drives a vehicle in wilful or wanton disregard for the safety of persons or property. (b) An offense under this section is a misdemeanor punishable by: (1) a fine not to exceed $200; (2) confinement in county jail for not more than 30 days; or (3) both the fine and the confinement."
But I've seen other places mention much higher fines, so you may want to check with an attorney for specific information. The speeding ticket itself will vary depending on what county you are in, so you'd need to check with that courthouse to get an exact total, but given how fast you were going - probably pretty hefty.
