1 or 2 meals can be healthy, you do not need to supplement as long as the meals and food you eat are healthy, eat fruits, vegetables, protein, dairy, and some wheat. You'll be fine. I only eat 2x per day and am healthy as can be
You need to eat smaller meals more often for a better metabolism. Eating "colors of the rainbow" is a good start - brightly colored veggies contain the most nutrients, as opposed to processed or "boring" gray-brown food. As for vitamins, get a HIGH dose vitamin of C, then a good multivitamin.
