Well you need to cook it very thoroughly so as not to get sick. What you will want to do is marinate your roast overnight. Then the next day, wrap it well in heavy duty aluminum foil after you season it to your liking. Then get your coals ready by making sure that you use plenty of good, long burning coals as you will be cooking roast for a while. Once your coals are ashed over, separate them a bit to even out the coals over the whole grill for even cooking. Then cook roast till done about 3 to 4 hours depending on size of roast. You will open one vent but not all of them.
