What was life like as a noble in the middle ages in europe

Well the nobles had it a little better than the peasant class. First off they had a lot more meat in their diet. I have read that they would not even eat vegetables, that was considered peasant food. They ate breads and cheeses and game as well as livestock like sheep and pig.
But there was no refrigeration so sometimes even the wealthy ate spoiled food, they added a lot of spices to it to make it a little more edible.

They dressed in fine clothing, the women in dresses of silks and satins and even velvet if they were very rich and elaborate jewelry as well.

Women were still considered property though, they did not have any rights at all.

they had a better life than peasants and serfs. they often got entertained by tournaments, falconry, and family/friend reunions they did little work unlike peasants. what work they did have was usually done by advisors
