Sweetbreads are culinary terms for thymus which contains the gullet, throat and neck or even the pancreas composing of stomach, heart and belly more specifically with calves, lambs, beef and pork. It can also refer to different glands such as parotid glands including the ear and cheek, salivary glands, the testicles and the tongue and throat composing the sublingual glands. After taking out the membrane it then usually dipped in salt water and simmered in milk. Common cooking style of sweetbreads is frying with breading on them. It may also serve as fillings. Why they were referred to as sweetbreads is still indefinite. Theoretically, sweet may refer to the taste of these parts of animals compared to their main flesh and bread may have originated from the word “brede”.
