How can you get a crumb coating to stick, when frying fish or chicken?
light crumb coating
Dip in beaten egg, then roll in panko bread crumbs
Usually, they dip the fish/chicken in a batter ... I don't recall what's in the batter, other than eggs.
You can also dip the fish or chicken in buttermilk or melted butter or margarine. Depends on what kind of flavor and texture you're going for.
Stir up some eggs with a fork and dip the chicken in it then put the chicken in the crumbs
You could dip it in some stirred up eggs or you could use mayo.
I like to lightly beat an egg, then stir in some milk. Dip your fish etc...in this, then roll in your crumbs.
Usually egg white will help. Dip it in some and roll the poultry in the bread crumbs.
Before you dip it in egg wash, make sure you dry the chicken thoroughly with a paper towel. (And please season the bread crumbs.)
