Jamie Oliver says that the perfect omelette is inexpensive and delicious. Use 3 eggs, cracked, whisked with salt and pepper and cooked in a little extra virgin olive oil mixed with a little bit of butter over medium heat. Stir the eggs gently to bring the uncooked egg into contact with the hot pan. Grate cheese over the top of the egg. Cook on low until the eggs appear cooked.
