The word "carne" is Spanish for "meat', but it refers specifically to the red meat of a bovine. The "picada" aspect of the meal is made in a similar fashion to ranchero sauce. You would saute garlic cloves (chopped), tomatoes (diced), jalapenos (diced), onions (sliced or diced to preference), salt, pepper, chili powder, and the desired "carne". It can be made with tripe, skirt steak or ground beef. Sautee the onions first in 2 tablespoons of vegetable oil until they are tender. Next, add the beef and jalapenos. Use the spices and garlic to season the meat. Bring the heat up to brown the heat, then drop the heat back down before adding the tomatoes.
