To freeze fresh carrots you must rinse them in water, peel and cut off both ends. Leave smaller carrots whole and cut larger carrots into slices, cubes, or strips, whichever you prefer. Than take carrots and place in a pan with boiling water, 5 minutes for small whole carrots, pieces for 2 minutes. Immediately remove and place in a bowl filled with ice and water until completely cold. Drain completely and place in freezer bags or vacuum bags, removing as much air as possible and place in freezer.
Wash and slice carrots and place them into a pot of boiling, salted water for 2-3 minutes. Immediately transfer into a bowl of ice water to stop the cooking process. Drain well, package into heavy duty freezer bags and freezer for up to 12 months.
