One healthy way to prepare fish is to make Creole Red Snapper you will need a tablespoon of olive oil, 1/4 cup of chopped onion, 1/4 cup of chopped green bell pepper, a clove of minced garlic, 1 14.5 ounce can of no salt added whole tomatoes undrained and chopped, 2 teaspoons low sodium Worcestershire sauce, 2 teaspoons red wine vinegar, 1/2 teaspoon dried basil, 1/4 teaspoon salt and 1/4 teaspoon fresh ground black pepper, a dash of hot sauce, 4 six ounce red snapper fillets and fresh basil sprigs. Heat oil in a skillet and add onion, green pepper, and garlic to saute until tender. Add tomatoes and the next 6 ingredients. Bring to a boil and add fish. Spoon the sauce over the fish. Reduce heat to simmer and cover. Cook for 12 minutes or until fish flakes. Garnish with basil.
