What are some good ways to encrypt written messages?

One of the good ways of encrypting is through replacement of letters. That is, you replace each letter of the message with the letter that is located a fixed distance further down in the alphabet. An example would be, you are in great danger to be encrypted to BRX DUH LQ JUHDW GDQJHU.
