The use of vinegar in food preservation is for toxic inhibition. Smoking, alcohol and the use of carbon dioxide are means of toxic inhibition as well.

Vinegar is used in in food preservation to destroy bacteria. Vinegar is known to be low in the pH levels which means high acidity.
