Peanut butter and banana/strawberry sandwhich on whole wheat bread, steamed rice and vegetables, or like a fruit salad.

I grill fish with homemade pesto on top and some steamed veggies with rice.

7 Layer Salad:

Ingredients:
1 head of lettuce, shredded 1 package of frozen peas, cooked
1 head of cauliflower 1 cup of mayo
1 medium onion, diced 1 lb. of bacon, cooked and crumbled
1 cup of shredded cheese
Layer ingredients in order given.

Turkey Meatballs

1.25 93% lean ground turkey (you may use 85% if you don?t mind the extra fat)
1/4 cup olive oil
6 ounces mushrooms (any kind, I like cremini) diced
1 small onion diced
1 jalapeno seeds and stem removed diced
3-4 garlic cloves peeled and minced
1 egg
2 cups cooked rice
3 tablespoons fresh chopped parsley
1/2-1 tsp salt
1/2 tsp cumin
1/2 tsp pepper

First , put mushrooms, onion, and jalapeno in a food processor and dice.

Next, saute the three ingredients in the olive oil about 10 minutes until most of mushroom juice is removed.

Put veggie mix in large mixing bowl and let cool for a few minutes. Add rice, garlic, egg, parsley, and dry spices and mix well.

Add meat and mix together until just blended. Latex gloves work well for this job.

Shape into fairly large meatballs and place on cookie sheet lined with parchment paper. Be careful not to press the meat too tightly as you will have a dense dry meatball.

Bake in oven on 350 for about 20-25 minutes until cooked all the way through. Serve with Caesar salad, steamed broccoli , and pasta with garlic, olive oil, and Parmesan.

I like to use zipsteam bags to steam my veggies quickly and easily in the microwave.
