Can I make Eggplant Parmesan the day before I want to serve it? Will it get soggy?

If you mean can you assemble it the day before and bake it the day you serve it, I think that would work well. Make sure the eggplant slices are dry to the touch (not dried out; just blot off any extra moisture with a paper towel); assemble the recipe; cover the casserole dish with plastic wrap and chill. Allow a few extra minutes baking time to allow for it having been in the refrigerator.

Yes, you cannot make Eggplant Parmesan the day before you want to serve it. Eggplant Parmesan takes quite a while to assemble and it is much easier to prepare in advance.
