Easy Tomato Basil Hummus Recipe

Made from chickpeas, hummus is full of protein and fiber. It's great to serve on whole wheat crackers, but it also works wonderfully as a sandwich spread or veggie dip. This recipe combines tomatoes, basil and garlic to put an Italian spin on a traditionally Mediterranean dish!

Ingredients:

• 1 cup fresh tomatoes, diced

• 1 can chickpeas, drained

• 1/4 cup onion, sliced

• 2 garlic cloves, peeled

• 1/2 tsp. salt

• 2 tbsp. fresh basil, chopped

• 1/2 tsp. cayenne pepper

• 1 tbsp. tahini

• 1 tsp. olive oil

The instructions for this recipe are as easy as they come! All you need to do is put all of the ingredients in a food processor and blend them until the hummus is smooth. Garnish it with fresh tomato chunks and serve with toasted pita chips.

Healthy Carrot Ginger Muffins

Muffins are one of those foods that we think are healthy, but in reality, they usually pack about 400 calories a pop! These simple muffins have low sugar and surprising flavor, but they're only about 150 calories per muffin.

Ingredients:

• 1 1/2 cups whole wheat flour

• 1/2 cup packed brown sugar

• 2 tbsp. cinnamon

• 1 tbsp. all spice

• 2 tsp. baking powder

• 1 tsp. baking soda

• 1/2 tsp. salt

• 3/4 cup plain yogurt

• 1 tbsp. butter

• 1 tbsp. fresh ginger

• 1 egg

• 1 tsp. vanilla extract

• 6 medium carrots, peeled

Preheat your oven to 375 degrees. Put the peeled carrots in a food processor and pulse them until they're cut into tiny pieces. Next, add the egg, vanilla, butter, ginger, sugar and yogurt to the food processor with the carrots. Blend the ingredients until they're smooth. Finally, add in the dry ingredients, including the flour, sugar, cinnamon, all spice, baking powder, baking soda and salt. Blend completely, or until the mixture forms a thick paste. Spoon the mixture into a lined muffin pan with 12 cups. Bake for 20-25 minutes.

Sweet Potato Curry with Kale and Chicken

This easy, one-pot curry is warming and spicy, making it the perfect winter health food. Serve it with brown rice or eat it on its own!

Ingredients:

• 2 boneless chicken breasts, sliced in small pieces

• 1 tbsp. sesame oil

• 2 tbsp. Sriracha hot sauce

• 2 tbsp. yellow curry powder

• 1 tsp. cinnamon

• 1 tsp. garlic salt

• 1 can light coconut milk

• 1 cup water

• 1 large onion

• 4 sweet potatoes, peeled and cubed

• 3 carrots, peeled and chopped

• 1 tbsp. fresh ginger, sliced

• 1 cup broccoli florets

• 10 kale leaves, torn into small pieces

In a large pot, brown the chicken and onions in the sesame oil. Next, add the coconut milk and water and bring to a boil. Add the sweet potatoes, carrots, ginger, Sriracha, curry powder, garlic salt and cinnamon. Stir well, and then simmer for 20 minutes on medium heat. When the potatoes are tender, add the broccoli, and then cook for five more minutes. Take it off the heat and stir in the kale, which will quickly wilt and cook. Serve immediately.
