Creative Jello Recipes

Jello is such a versatile dessert that all it takes is a little imagination and a few creative recipes to invent your own Jello creation! For many of us, the taste and consistency of Jello recalls desserts at family meals, after school snacks or sleepover parties with our best friends. However, you probably never ate jelly like this when you were a little one. The following creative takes on Jello are great for experimenting in your kitchen.

Coffee Jello

  • 2 tbsp. of gelatin
  • 2/3 cup of cold water
  • 1 cup of boiling water
  • 1 ½ cups of strong coffee
  • 1/3 cup of sugar
  • Whipped cream
  • Chocolate sauce
  • Cinnamon
  • Nutmeg

In a large pan, soak your gelatin and your cold water for about 5 minutes. Boil 1 cup of water and add it to the pan, stirring until the gelatin dissolves. Brew 1 ½ cups of strong coffee and add it to the pan too, in addition to 1/3 cup of sugar. Pour this mixture into your Jello molds and refrigerate. Top the Jello with whipped cream, chocolate sauce, cinnamon and nutmeg.

Pineapple Cucumber Lime Jello Salad

  • 1 pack of Lime Jello
  • 1 tsp. of salt
  • 2 cups of hot water
  • 2 cups of cold water
  • 1 ½ cups of peeled and diced cucumbers
  • 3 tbsp. of horseradish
  • ½ tsp. of grated onion
  • 2 tbsp. of vinegar
  • 1 ½ cups of canned pineapple

Dissolve Jello and salt into your hot water. Then add your cold water and let it chill until it thickens, which should take about 30 minutes. Separately, mix your cucumber, horseradish, onion and vinegar. Fold in the pineapple, and then add this bowl to your Jello. Pour it into a large Jello mold and let it chill for about 6 hours. Remove and serve.
