This recipe makes 36 cookies, so halve or double according to your needs. You will need approximately 7 hours, as the dough must chill. Actual cooking time only takes 30 minutes.
1 cup butter or sugar, softened
¾ cup sugar
¾ cups packed brown sugar
2 eggs
1 tsp vanilla extract
2 and ¼ cups all purpose flour
1 tsp baking soda
1 tsp salt
2 (3.5 ounce) jars macadamia nuts, chopped
2 cups semisweet chocolate chips

Cream the butter and both sugars in the mixing bowl. Add the vanilla and eggs and beat on medium for two minutes. In another bowl, combine the flour, baking soda and salt before adding it to the creamed mixture. Beat for another two minutes. Use a wooden spoon to stir in the nuts and both chips. Cover and refrigerate for 6 hours or overnight. The next morning or later that evening, remove the bowl and use a tablespoon to drop the dough onto ungreased baking sheets. Keep about two inches between cookies so they can expand. Bake at 375 degrees for 10 to 12 minutes or until golden brown. These can overcook quickly, so keep a careful eye on them. Check around minute nine, as many ovens cook at different speeds. Let them cool on the pan for one minute, and then move them to a wire rack to cool completely.
If vanilla chips irk your stomach, simply leave them out of the recipe. Or, if you prefer very sweet cookies, use only white chocolate instead of regular. Add in 2 cups of white chocolate instead of the chocolate and vanilla chips. A few recipes also include rolled oats. Try one that calls for 3 cups flour, 2 tsp baking soda, 1 tsp salt, 1 and ½ cup brown sugar, 1 and ½ cup shortening, 2/3 cup white sugar, 4 eggs, 1 tsp vanilla extract, 1 tsp lemon juice, 2 cups chopped macadamia nuts and ½ cup rolled oats. Cream the butter, sugars, eggs and shortening until well blended. Add in lemon and vanilla. Stir in the flour, baking soda and salt; mix well. Fold in the macadamia nuts and oats. Cover and chill for four hours, then preheat the oven to 325, prepare the baking sheets in the same manner and cook for 15 to 18 minutes. These will be chewier and slightly toasty from the rolled oats.
