• 1 pound fish fillets of your choosing (fresh or frozen)
• 2 tbsp extra virgin olive oil
• 3 tbsp fresh squeezed lemon juice
• Sea salt and cracked black pepper, to taste
• Fresh dill
Preheat oven to 350°F (180°C). Oil a baking dish large enough to accommodate your fish. Next, arrange fish in a layer; drizzle with olive oil and fresh squeezed lemon juice. Sprinkle with sea salt and cracked black pepper and top with sprigs of dill. Bake at 350°F (180°C) for 20 to 30 minutes or until done, depending upon thickness of fish. You can serve this with a rice pilaf and side salad for a complete meal.
This is a quick and easy meal that can be prepared outdoors on a grill for those nights when you simply don't want to heat up the kitchen. Serve over whole-wheat pasta and pair with a refreshing fruit salad for a couldn't-be-simpler meal.
Ingredients
• 4 boneless, skinless chicken breasts or thighs
• 8 Roma tomatoes, cut into 1/2″ thick slices
• 2 cups fresh or frozen asparagus pieces
• ½ cup basil pesto
• 2 tbsp low fat mayonnaise
• Sea salt and cracked black pepper, to taste
Heat grill until it is medium/hot. While the grill is heating, in a small bowl combine the pesto with the lowfat mayonnaise. Set aside. Next, assemble foil packets by placing one pieces of chicken on an 18 x 12” piece of heavy-duty foil. Then, spread asparagus and tomatoes over the chicken packets, taking care to divide evenly. Fold the foil over the chicken, ensuring there are no open corners. Grill packets over medium coals for 25 – 30 minutes or until juices run clear. Alternatively, you can prepare these delicious and easy pesto packets in a 450-degree oven for 20 – 30 minutes or until done.
