The first thing you want to do is make sure that you have a large enough rabbit cake mold. This recipe is good for 6-8 servings so your mold should be large enough to support this. It should be aluminum so that it is safe for baking and also should have two halves. Coat both halves with vegetable oil and let it sit for a few minutes. Afterwards wipe away excess oil and apply a layer of flour over the oil.
Preheat your over to 375º F and begin to sift your cake flour. Add in baking powder and salt and continue to sift until there are no lumps and mixture is evenly smooth. In a separate bowl, mix together butter and sugar to create a cream. Make sure to continue mixing the two until cream is light and fluffy. Then, one at a time, fold in your sifted flour, milk, and vanilla extract. You will begin to form your cake batter. Before you add each ingredient in, make sure batter is smooth. Clumps in the batter will lead to a poor cake, because it means all the ingredients are not properly mixed. Finally, add in your egg whites and beat them into the batter until soft peaks form.
Now take your batter and fill up your mold. Use a wooden spoon to aid in filling the bottom half of your mold, making sure to smooth out any air pockets. When filled, cover your mold with the top half and lock it in. Put your mold on a cooking sheet and place it in the oven. Let it bake for about an hour. At this time, you should be able to remove your cake and let it cool. After cooled for about 20 minutes remove the top mold and let it cool completely.
When cooled, you can begin to put icing on the cake. Apply a layer of vanilla frosting all over the cake. Make sure it is spread evenly. Using the strawberry frosting, give your bunny eyes and a nose and color in its ears. Feel free to give your bunny whiskers as well. For some added texture, sprinkle coconut shavings over your cake.
