The Kartoffelkuchen recipe is a German favorite, comprised of a plain potato cake that can be served up sweet or savory. In its sweet incarnation, Kartoffelkuchen is often compared to the Americanized coffee cake, but it is a true German recipe that emigrated to the states in the early 1900's. Here is a lovely recipe for a sweet version of traditionall Kartoffelkuchen that is suitable for special occasions or just a weekend morning family gathering!

Instructions
Boil the potatoes in water that is sufficient to cover the tops of the potatoes. When potatoes are soft, remove them but be sure to save the water. Mash the potatoes, then add measure the amount of the remaining potato water. Next, add additional water to the potato water to equal a total of one and a half pints of water. Next, combine all of the non-streusel ingredients together into a thick, firm batter. Cover the batter and then place it in a bowl in a warm location overnight.
The next morning, knead out the dough and then let it rise until double in size. Spread out the risen dough onto a well greased baking pan (you will probably need two baking pans) and let it rise again until doubled. This should take approximately one hour. Brush the melted butter over the top, then mix together all the streusel ingredients and sprinkle over the Kartoffelkuchen. Preheat over to 400 degrees. When oven is hot, place the pan with Kartoffelkuchen in for 20 minutes or until golden brown.
