Tasty Garden Salad Ideas

Fresh-picked salad ingredients straight from your garden are incredibly flavorful and tasty. There's nothing better than eating fruits and veggies you've grown on your own. When it comes to coming up with tasty garden salad ideas, though, it can be difficult. There are plenty of garden fresh ingredients you can use in your salads besides lettuce, tomato and cucumber that will lend an interesting twist to your everyday. Try these simple yet exotic recipes to spice up your garden salads. Each serves two.

Strawberry Basil Garden Salad

You'll need:

  • 2 cups fresh garden spinach
  • 5 basil leaves, chopped
  • 1/2 cup strawberries, sliced
  • 2 tbsp parmesan cheese or 1/4 cup mozzarella
  • 4 tbsp walnuts
  • 1/4 cup red onion, chopped
  • Balsalmic vinaigrette

Wash your spinach and tear it into pieces with your hands. Dry and put into a bowl. Next, top with the cheese of your choice (mozzarella and parmesan will both work wonderfully) and add red onion, basil, strawberries and walnuts. Drizzle with balsamic vinaigrette and serve. Makes a perfect summer lunch salad.

Spicy Okra Pepper Garden Salad

You'll need:

  • 1 1/2 cups cottage cheese
  • 10 pods okra, sliced
  • 1 large banana pepper, sliced
  • 4 cherry tomatoes, sliced
  • Sriracha hot sauce to taste
  • 2 large lettuce leaves

This low-calorie, protein-packed garden salad makes a great snack or small meal for those who love spicy food. Pick okra, banana peppers, cherry tomatoes and lettuce straight from your garden. Wash thoroughly, then slice all but the lettuce into small pieces. Use the lettuce leaves on plates as "bowls" for this delicious salad. Combine cottage cheese, okra, banana pepper and cherry peppers in a bowl and stir together. Spoon the mixture onto lettuce leaves and drizzle with a small amount of Sriracha. (Be careful — it's really spicy!) Serve immediately.
