In large bowl: 1...oil 2 c. grated zucchini , peeled 1 grated lemon rind 1/2 c. lemon...bowls together. Makes 2 bread loaf pans. Bake 1 hour at 350 degrees.

I have a recipe for zuchini lemon poppyseed bread but I don't know if I'm supposed to peel the zuchinni or not because the recipe doesn't say. What should I do? or would it really matter? I only have time to make it once before a party this weekend so if I screw up I'm out of luck
Pour batter into prepared pans. Bake until a toothpick stuck in the center of the bread comes out clean, about 1 hour 15 minutes. Cool on rack 10 minutes, then remove from pans and cool completely.
