Make 30 cups of coffee by using a 30-cup percolator, adding the coffee and water, and giving it sufficient time to brew. Keep the percolater clean between brewings, and transfer fresh coffee to a carafe as soon as possible after brewing to enhance the flavor.
- Set up the percolator
Place 2 cups of ground coffee in the basket of a 30-cup percolating urn. Fill the urn with 24 cups of water for a general ratio of 1 to 2 tablespoons of coffee to every 6 ounces of water. Always start with fresh coffee, and never reuse old coffee grounds. For the best coffee, grind the beans right before you intend to start the brewing. Use cold, filtered water if possible. Never use softened or distilled water to brew coffee.
- Let the coffee brew
Let the coffee percolate and brew for approximately one hour. A light on the perculator turns on when the coffee is brewed. Make sure the temperature holds steady at between 195 and 205 degrees Fahrenheit while brewing. Transfer the coffee to a carafe for serving.
- Clean out the percolator for future use
After the percolator is empty, run a pot of half water and half vinegar through it, followed by a pot of just water. This rinses the percolator clean for the next batch of coffee.
