Prawns are sometimes sold cooked, but for this recipe, raw prawns are desired. Attempting to cook already-cooked prawns results in rubbery prawns. Some stores may call large shrimp "prawns"; they taste much the same, however, so do not worry a great deal about any confusion. Some stores sell prawns that are already cleaned. The head needs to be cut off, the legs removed, the shell peeled off and the large vein removed from the back. In almost all cases, the tail needs to be cut off right before cooking. Rinse the prawns, and pat them dry.
Use a sharp knife to cut into the flesh of the prawn from the underside. Cut about halfway into the prawn but do not cut the prawn in half. Open the prawn up like a butterfly. This process allows the flesh to cook evenly and quickly. Place the prepared prawns on a broiling pan.
Melt 1 cup of butter, and add 1 teaspoon of minced garlic and 1 1/2 tablespoons of lemon juice. Pour 1/4 cup of this butter mixture into a bowl, and set the rest aside. Using a soft brush, cover the prawns in the flavored butter from the small bowl.
