Heavy cream is frequently referred to as whipping cream, though the latter is much denser. Heavy cream is often used to make whipping cream since it can be whipped to double its volume and hold its shape. When used in recipes such as Alfredo sauce, it thickens and adds flavor. To qualify as heavy cream, the cream must have at least 36 percent of butterfat content. It is available as pasteurized or ultra-pasteurized.
